Located slightly away from the bustle of Azabu‑Juban, kiso is a restaurant that approaches dashi—the very foundation of flavor—with unwavering focus.
In addition to classic ingredients such as bonito flakes, kombu, and dried sardines, kiso also draws umami from meat, seafood, and mushrooms, treating them as forms of dashi and incorporating their depth into each dish. Rooted in Japanese culinary philosophy yet employing French and Chinese techniques, the cuisine clearly expresses the relationship between ingredients and dashi. While free from conventional frameworks, the core of each flavor remains steady and true.
The interior is unified in dark, earthy tones inspired by dried ingredients—the very elements that form the base of dashi. Shades reminiscent of kombu, shiitake mushrooms, and katsuobushi appear throughout the furniture and logo, allowing guests to experience the restaurant’s philosophy through the space as well. Watching the chefs work across a counter crafted from 200‑year‑old wood quietly heightens anticipation for the meal ahead.
Neither confined to “high‑end Japanese cuisine” nor “creative cuisine,” kiso presents a form of Japanese‑French dining with dashi at its heart.
