Chef Tetsuya Horie, raised in a family that ran a French restaurant, naturally found his path in the culinary arts. After honing his craft both in Japan and abroad—including experience in three‑ and two‑Michelin‑starred restaurants—he now devotes himself to creating cuisine that only he can express.

Each dish is built upon a sincere dialogue with Japan’s seasonal ingredients. Rare and characterful products—such as ostrich from Tsukuba in Ibaraki and deer heart from Aki‑Takata in Hiroshima—take center stage.
