Chef Ishikawa personally visits Toyosu Market to source seasonal ingredients from trusted wholesalers, creating dishes that draw out their full potential—sometimes through elegant simplicity, other times through bold creativity. Among his signature offerings, the handmade Trofie infused with concentrated seafood flavors stands out as a must‑try dish that captures the essence of his culinary identity.
Another highlight of the restaurant is the dessert selection by Chef Ishii, who previously served as sous‑chef pâtissier at Ginza’s Bvlgari Il Ristorante Luca Fantin. Guided by his desire to “create dishes that are beautiful and refined,” his desserts surprise not only with their flavors but also with their textures and structure. The course features two contrasting desserts, providing a vibrant and memorable finale to the meal.
