Nestled just steps away from the Azabu-Juban shopping street, Principio is a small, hidden Italian restaurant. Its name means “beginning” in Italian, and guests are warmly welcomed by the cheerful husband-and-wife team who create a truly inviting atmosphere.

The chef specializes in handmade pasta and charcoal-grilled dishes that highlight the flavors of seasonal ingredients. The course menu incorporates regional pastas from across Italy, giving diners the feeling of traveling through the country. Each pasta is carefully cooked to draw out the rich aroma and flavor of the wheat, then perfectly combined with its sauce for a taste that is simple yet deeply satisfying. Charcoal-grilled aged pork and tankaku beef (Japanese Shorthorn) are seasoned only with salt and pepper, allowing the natural character of each ingredient to shine.
