
About Sushi Masa Ishibashi
“Sushi Masa Ishibashi,” a sushi restaurant that captivates gourmets both in Japan and abroad, is nestled in Ginza, offering a serene and tranquil atmosphere.
Born into a sushi family in Tochigi, Masakazu Ishibashi had already honed his craft during his high school years — a true prodigy. Over five years abroad, he refined both his technique and his command of English before returning to Japan.
In Ginza, he went on to earn a Michelin star, and later guided the restaurant’s Singapore sister location to two Michelin stars, firmly establishing his reputation as a master of his art.
The shari (vinegared sushi rice) is a masterful blend of red vinegar aged for five and three years, paired with fish selected at their peak of maturation to draw out the fullest umami. Enhancing the experience is a curated selection of more than 30 sake varieties from across Japan, offering pairings unique to Sushi Masa Ishibashi.
The interior features a whitewood counter, an *ajiro* (woven bamboo) and *kumiko* (wood lattice) ceiling, and a hand-carved wooden refrigerator — all showcasing the artistry of Japanese craftsmanship. The warmth of wood and the quiet harmony of the space elevate dining into an extraordinary experience.
