
Kagurazaka Marutomi

Located in Nihonbashi Hamacho, “Taniya Kazu” was born from a collaboration between Kazuyuki Tani, owner of the renowned Sanuki udon restaurant “Taniya,” and Yosuke Tsubonuma, who trained at “Akasaka Kikunoi.” The restaurant is now led by Tsubonuma, who draws on the skills he cultivated at Michelin-recognized establishments to offer an “udon kaiseki” centered on dashi—the essence of Japanese cuisine and the foundation of udon’s flavor.
The course features Japanese dishes prepared with seasonal ingredients and concludes with firm, handmade udon noodles. Guests may choose from three types of udon, and depending on the course, its specialty karasumi udon (udon with dried mullet roe) is also available. Another highlight is the restaurant’s dedication to crafting everything in-house, from ponzu and dashi soy sauce to seasonal dressings and desserts.
The drink selection includes around nine varieties of sake that change with the seasons, along with a well-curated lineup of domestic wines.
Set within a renovated traditional house, the interior is enveloped in the warmth of wood and offers both counter seating and private rooms, making it suitable for a wide range of occasions—from business entertaining to intimate gatherings. Guests are invited to experience the depth and richness of dashi through the restaurant’s diverse dishes.
