About Tsurezure

Tucked away in the heart of Nishi-Azabu, "Tsurezure" is a secluded irori (fireside Japanese hearth) restaurant limited to two groups per day, offering a peaceful retreat from the city's bustle. Step inside and immerse yourself in a tranquil space, infused with nostalgia and warmth. Two private rooms, centered around a traditional irori, provide a setting for a leisurely and luxurious experience.

The simple interior, with minimal decor and soft indirect lighting, creates a soothing and peaceful atmosphere. Gathering around the irori, once the heart of Japanese homes, offers a warm and intimate dining experience. The name "Tsurezure" embodies the desire for guests to forget their busy lives and enjoy relaxed dining and drinks with close companions in a stylish, modern irori setting—a truly indulgent escape for adults.

The irori at "Tsurezure" serves as a chef's table, where the chef prepares dishes right before your eyes. Cooking begins upon the guests' arrival, allowing you to fully appreciate the aromas and the evolving appearance of the ingredients. The slow charcoal cooking sets a relaxed rhythm, fostering heartfelt conversations and cherished moments over exquisite cuisine.

The cuisine features carefully selected seasonal ingredients sourced by the chef from across Japan, including "Kanbiton" pork from Nagasaki and "Suigo-dori" chicken from Chiba. Occasionally, unique ingredients such as "Tajimaguro" beef from Hyogo—each with its own remarkable sourcing story—also make an appearance. The chef's narratives about encountering these ingredients add another layer of flavor to the dining experience.

The irori serves as a stage for diverse cooking techniques—steaming, grilling, ash roasting, block roasting, and hot pots—each highlighting the unique character of its ingredients and showcasing the artistry of irori cuisine. The interspersed small bowls and dishes create a well-paced course, culminating in kamameshi (kettle-cooked rice), a hot pot soup, and fragrant hojicha (roasted green tea) prepared over the irori.

The drink selection features carefully chosen fine wines, along with sake and beer to complement the dishes. A variety of soft drinks, including French non-alcoholic cider and Chinese black tea, are also available for those who prefer non-alcoholic pairings.
