The gently arching willow tree serves as a symbol of our name, Koryu. Even the curved wickerwork ceiling of our modern sukiya-style interior evokes harmony with the riverbanks of Osaka—the city of water. Embracing the spirit of Naniwa, we celebrate the region’s bounty with generous offerings of seasonal seafood—true to the name Naniwa-魚庭 ("fish garden")—and traditional vegetables. Like the supple willow, our cuisine is grounded in solid technique and shaped by flexible, creative thought.
During the Edo period, Osaka was known as the “Kitchen of the World”—a vibrant hub where regional specialties and rich ingredients from across Japan gathered. The fertile Kawachi Plain was called Naniwa-菜庭 ("vegetable garden"), and the abundant waters of Osaka Bay were known as Naniwa-魚庭 ("fish garden"), forming the foundation of what came to be known as Osaka cuisine. Unlike Kyoto’s delicate flavors, Osaka’s cuisine highlights the essence of its ingredients—enriching each ingredient with the umami of kelp to evoke kuimi—a mellow, rounded flavor delicately refined through mindful seasoning. At Koryu, we build upon that tradition with our own sensibilities, offering a renewed interpretation of Osaka cuisine.
To us, a dish is not finished simply by being served—it comes alive through all five senses. Color, sound, aroma, taste, and texture blend with the atmosphere to create an experience that transcends flavor alone. Only then does the experience find its full expression. We prepare carefully selected seasonal ingredients right before your eyes, allowing you to feel their freshness, witness the glow of the flames, hear the gentle simmering, and inhale the aroma of charcoal. To ensure our guests enjoy seasonal ingredients at their very best, counter seating is offered only at two designated start times: 6:00 PM and 9:00 PM. Guests may enter the restaurant up to 15 minutes before to their reserved time.As all guests are served simultaneously, we kindly ask that you arrive on time to avoid inconveniencing other guests. Please note that if you arrive more than 15 minutes late, your reservation may be subject to cancellation.
