At the helm is a rising chef appointed by the Ministry of Agriculture, Forestry and Fisheries as a Goodwill Ambassador for Japanese Cuisine, who was entrusted with the role of head chef at the age of twenty‑one by the esteemed Tadamichi Ohta.
What awaits is a one‑of‑a‑kind experience: a tasting that contrasts aged fish, whose umami is drawn out to its fullest, with freshly prepared seafood celebrated for its lively, supple texture. Paired with an array of inventive small dishes crafted through the chef’s distinctive techniques, each course offers a sensory experience that engages all five senses. To accompany the meal, the chef curates around fifteen varieties of local sake, along with a selection of about ten red and ten white wines from around the world—each chosen to create a harmonious pairing with every dish.
The counter seats offer a front‑row view of the chef’s flowing, precise movements, immersing guests in the live energy of the kitchen. Private rooms for three to six guests provide a relaxed setting ideal for special gatherings or business occasions. If you have any specific food allergies or ingredients you cannot consume, please inform us in advance. Unfortunately, we cannot accept reservations if there are ingredients that you cannot eat within a wide range.

Arrival time:
Please arrive 5 minutes prior to your reservation time to ensure your meal can start on schedule. If you exceed your reservation time by 15 minutes without prior notice, your reservation will be automatically treated as a cancellation.
If you arrive late or need to leave early, please note that we may be unable to serve parts of your course. We kindly ask that you arrive with ample time to spare.
Regarding entry time, guests may enter the restaurant from 15 minutes prior to their reservation. Please note, however, that for reservations at 5:00 PM, the doors will open exactly at 5:00 PM.
