Karin, named after the grandfathers of the head chef, is a renowned sushi and Japanese restaurant led by the Chef and Vice Chef, who have gained immense popularity on social media with tens of million of views.
The Chef trained at Japan's most prestigious establishments, mastering everything from discerning the finest ingredients to the art of procurement. He personally selects the highest-quality ingredients every morning at the Toyosu Market, ensuring no compromise in his meticulous approach to sushi.
The restaurant features an L-shaped counter made from Yakushima cedar, creating a warm atmosphere with only 10 seats. The design encourages natural conversation between guests. With soft indirect illumination for diners and bright lighting for the counter, the lighting highlights the chef's movements and culinary artistry, creating a stage-like atmosphere where the cooking process is illuminated as if it were a performance.
The omakase course consists of exquisite sushi paired with seasonal dishes. For the finale, you will enjoy the signature "Karin Roll," a delectable combination of thick omelet and cooked eel, perfected through years of trial and error.
Additionally, as part of its SDGs efforts, the restaurant offers a unique drink made from leftover sushi rice and irregular vegetables. Developed in collaboration with a sommelier, this seasonal drink uses ingredients like tomato in spring, plum in summer, sudachi in autumn, and yuzu in winter, harmonizing the sweetness of the rice with the flavors of each season.
