Tokyo Bay is home to an abundance of rich, natural fish, ranging from premium varieties to familiar, everyday favorites. Among these, we carefully select the finest ingredients that exemplify the Edomae brand, focusing on quality and authenticity.
The craftsmanship of Edo sushi artisans, passed down through generations, is a hallmark of Tokyo’s culinary heritage. Originally rooted in preservation techniques developed during an era without refrigeration technology, these methods have evolved to emphasize bringing out the full flavor of the ingredients. Here, we meticulously recreate these traditional techniques to deliver the finest sushi experience.
We have eliminated fish cases to present a refined dining experience at a white wooden counter, where you can admire the chefs' artistry up close. Guests can enjoy our “OMAKASE NIGIRI COURSE,” a carefully curated main course of nigiri sushi designed to showcase the seasons of Japan. Our natural tuna is sourced from "Ishiji," a Toyosu wholesaler with an 80-year legacy, while fresh natural fish from Edo Bay (Tokyo Bay) highlights Tokyo’s rich sushi traditions and brings them to the world.
