
About Nihonbashi Kawaguchi
In March 2025, Yudai Kawaguchi, a seasoned sushi chef with 11 years of experience at the well-established Sukiyabashi Jiro, is set to unveil Nihonbashi Kawaguchi.
Kawaguchi's journey into sushi began with his time studying abroad, where he gained a deeper appreciation for the depth and refinement of Japanese cuisine. Upon returning to Japan, he honed his craft under the legendary Jiro Ono at Sukiyabashi Jiro, eventually becoming the master's right-hand man for his final four years.
At Nihonbashi Kawaguchi, he preserves the traditions of Edomae sushi while incorporating subtle influences from classic Edo cuisine. His nigiri follows the time-honored progression—from delicate white fish to tuna and kohada (gizzard shad)—yet distinguishes itself with a bright, refined shari (sushi rice) made from rice vinegar rather than the customary red vinegar. His carefully curated tsumami (side dishes) also pay homage to the flavors of the Edo period.
A strong advocate for local ingredients, Kawaguchi carefully selects premium Tokyo-sourced seasonings, including sake, soy sauce, mirin, and salt, and pairs his dishes with fine Japanese wines.
