
About Sushi Himitsu
Tucked away in a quiet alley of Akasaka, away from the bustle of the city, sits Sushi Himitsu, an intimate eight-seat sushi counter.
Chef Yasumitsu Hirayama presents an omakase course that showcases the finest ingredients of the day. Fresh seafood is sourced from across Japan, including Nagai Port in Kanagawa, and prepared with careful handling and precise aging to draw out each ingredient’s natural character.
The sushi rice features Tsukiakari, a premium variety selected by a certified rice master. Cooked in a traditional hagama pot, the rice is seasoned with either red vinegar or white vinegar depending on the season and the topping. Temperature, salt, and acidity are meticulously balanced to create sushi that gently melts in the mouth.
Chef Hirayama refined his craft at both sushi and Japanese restaurants and holds certifications as a Sommelier and SAKE DIPLOMA, valuing the harmony between cuisine and beverage.
In the softly lit space, light falls gracefully across the counter, quietly illuminating each piece of sushi and the chef’s precise movements.
In the tranquility of Akasaka, enjoy a once-in-a-day encounter with each carefully crafted piece.
