Chef Yamamoto initially embarked on his culinary career through Japanese cuisine, then ventured to Argentina, and later honed his skills in the Spanish Basque region.

Enthralled by the Basque tradition of "Asador," where seafood and meats are wood-fired in stone ovens, he was captivated. He masterfully emphasizes the essence of ingredients with a bold simplicity. A specially designed oven sits at the center across from the counter seats, where a red-hot glowing ember, kindled from charcoal and firewood, becomes the heart of the dishes. 

He carefully applies heat to seasonal ingredients, infusing them with smoky aromas, and grills meats and fish. For the main course, there is no sauce to convey the natural flavors of grilled meat, focusing solely on the purity of the ingredients.The course offered is only an omakase experience, with Chef Yamamoto single-handedly overseeing everything from cuisine to wine.

Blending authentic techniques with Japan's diverse seasonal produce, he crafts dishes unique to this establishment.
