"Jukusei Sushi Yorozu," a hidden gem in the bustling heart of Higashi 4-chome, renowned for its artisanal aged sushi. The owner, Akira Shirayama, is self-taught and continues to explore.
Indulge in an omakase experience centered on ‘aged sushi,’ a rare delicacy where each piece is a testament to our unique aging techniques, honing the finest flavors from the seas of Japan.
They offer omakase courses centered around "aged sushi," which is made by elevating fresh fish from fishmongers and fishermen from all over the country, such as Hokkaido, Miyagi, Kanagawa, Fukuoka, and Nagasaki, using his unique artisanal aging method.
The profound flavors drawn out through optimal methods such as ice aging, vinegar marination, and air drying, tailored to each type of fish, are truly otherworldly. These sushi toppings pair exceptionally well with the vinegar rice made from the specially prepared rice "yorozu-mai," which is cooked to perfection in custom-ordered vermicular pots.
With only six seats at the counter, the interior of the restaurant exudes a modern ambiance with a black color scheme. Guests can fully enjoy the exquisite pairing of sushi and Japanese sake through conversations with Mr. Shirayama.
