Tucked away in a quiet Ginza back alley, “Sushi Takeru” is a secluded haven where you can indulge in the ultimate sushi experience, crafted by proprietor Takeru Watanabe with seasonal ingredients and traditional techniques.
Mr. Watanabe, having honed his skills at the esteemed Ginza establishments “Kyubei” and “Sushi Arai,” drew inspiration from numerous mentors and patrons to fulfill his dream of opening his own place in April 2022.
The restaurant’s interior features a tranquil atmosphere with warm wood accents, where guests can observe the artistry of sushi-making from the counter seats.
The shari (sushi rice) is meticulously fine-tuned—from the soaking time and water temperature to the ignition duration, as well as the type of vinegar, salt, and sugar used—tailored to the rice variety and season, ensuring it perfectly complements sushi toppings.
At “Sushi Takeru,” they are committed to excellence in every detail, from ingredient selection to culinary execution, aiming to create an experience so delightful that you’ll eagerly anticipate your next visit.
