About Akasaka Kappou Washi
Nestled in a serene corner of Akasaka, Akasaka Kappou Washi is a reservation-only Japanese restaurant founded by Chef Takanori Hamano. Returning to the place where his culinary journey began, Chef Hamano opened this kappo restaurant in 2025, following years of experience at renowned establishments such as Michelin-starred Nogizaka Kamiya and Akasaka Takegami. His journey also includes expertise gained at Tsukiji, overseas restaurants, and roles such as sous chef at KAFUKA TOKYO and head chef at Ebisu Imaichi and Kagurazaka Washi. While deeply valuing tradition, he continuously embraces new challenges.
The name "WASHI" reflects his desire to "weave together the history of Japanese cuisine." He cherishes time-honored Japanese cuisine techniques and culture while incorporating modern sensibilities into every dish. Carefully selected ingredients, such as rare, domestically raised ostrich, are prepared with finesse using techniques like tataki, simmering, and charcoal grilling. Traditional crafts, such as hand-rolled soba, also play a central role in the culinary experience.
All dishes are prepared in front of guests at the counter, where the sights, sounds, and aromas of cooking can be savored with all five senses. Private rooms are also available, making it an ideal venue for business dinners, special gatherings, or intimate celebrations. Expertly curated sake pairings are offered to elevate the dining experience and unlock new dimensions of flavor.
Chef Hamano's respect for ingredients extends to sustainability, with a commitment to reducing food waste and practicing eco-friendly measures. Rooted in the Akasaka neighborhood, Akasaka Kappou WASHI bridges tradition and innovation to redefine modern Japanese cuisine.
