Centering its cuisine around grilled dishes prepared over binchotan charcoal, the restaurant showcases carefully selected seasonal seafood and vegetables sourced from across Japan, all crafted with deep respect for the traditions of Japanese cooking. At the heart of each dish is the chef’s signature dashi, which delicately draws out the natural flavors of the ingredients to create a refined, layered taste.
Inside, a Yoshino cypress counter anchors a warm, modern Japanese space accented by the bright grain of cedar wood. Guests can enjoy the captivating experience of watching the chef’s techniques unfold right before their eyes. Thoughtfully chosen tableware enhances each dish visually as well as in flavor. A curated selection of sake is available, along with white wines and shochu that pair beautifully with Japanese cuisine.
