The chef honed his skills at the renowned "Japanese Cuisine Tagetsu" in Aoyama and later served as the head chef at a prestigious Japanese restaurant in Ginza.
All ingredients are sourced directly from trusted producers across Japan, ensuring peak-season freshness and natural umami flavor. To bring out the essence of each ingredient, the chef employs traditional Japanese culinary techniques refined over generations. The dashi broth, considered the very soul of Japanese cuisine, is made with pristine water from "Uriwari no Taki"—one of Japan’s Top 100 Famous Waters—located in Fukui Prefecture. Combined with premium kombu (kelp) and freshly shaved katsuobushi (bonito), the broth becomes a dish in itself, offering a deep and layered flavor with an inviting aroma.
A wide range of beverages is also available, including seasonal sake such as shinshu (new sake), spring sake, summer sake, and hiyaoroshi (autumn sake), as well as carefully selected wines and whiskies.
