"Kinobu" – A Long-Established Kyoto Kaiseki Restaurant with a History of Tradition and Innovation
Established in 1935 as a distinguished branch of the esteemed "Kifuji" inn—formerly a purveyor to the Imperial Household—Kinobu first began as a catering service before evolving into a celebrated ryōtei (Japanese traditional restaurant).
Kinobu is a revered culinary destination where each visit unveils a fresh and exquisite encounter with Kyoto’s rich gastronomic tradition. The restaurant treasures its elegant ambiance, gentle atmosphere, and refined dishes, tailoring its service to each guest’s preferences.
The owner’s signature dishes are crafted with carefully selected seasonal ingredients and delicate seasoning, creating a refined, profound harmony known as “洛中味” — the traditional flavor of central Kyoto. Beyond its stately entrance, guests step into a tranquil and elegant setting featuring diverse seating arrangements, including traditional tatami rooms, refined table seating, and horigotatsu (sunken-floor seating). It is the perfect setting for family meals, gatherings with friends, or business occasions, allowing guests to fully savor the seasonal flavors of Kyoto.
The third-generation chef, Takuji Takahashi, aspired to bring Japanese cuisine to a global standard. He moved to Tokyo at a young age, earned a sommelier certification, and trained in France. Infused with global culinary influences, he masterfully crafts innovative dishes that seamlessly weave Kyoto cuisine with sophisticated Western techniques. His cuisine features a layered flavor profile that incorporates techniques such as fonds and bouillon, expanding beyond the traditional dashi broth-based approach.
In addition, Kinobu offers thoughtfully designed pairings not only with sake but also with wine, elevating the appeal of Kyoto cuisine through unrestricted creativity. Placing great importance on emotional connection through cuisine, atmosphere, and tableware, Kinobu is also ideal for special moments such as anniversaries or marriage proposals.
