About Ginza ETHICA
Chef Nakajima, who learned the authentic Mexican Gastronomy in Mexico, presents a course that combines ancient traditional methods and innovative ingredients and elevates them with a modern stylish presentation.
“Ethical” means doing the right thing, and the restaurant uses ingredients such as game meat and go-to-waste vegetables to create an ethical ambiance. The interior is also made using ethical materials such as scrap wood.
“Natural wine” is selected by our sommelier, who has a background in three Michelin-starred restaurants. We also offer wine pairings and non-alcoholic pairings.

Short Course
If requested in advance, we can provide the service within 90 minutes.
In consideration for the health of our customers, we try not to season our dishes too strongly and aim for a "Hara Hachi Bu (80% full)" which is a Japanese diet rule that helps our Sirtuin(Anti-Aging) gene. There is also an old English saying "Gluttony kills more than the sword". It also prevents left over food loss as well.
Additional items such as tacos and desserts can be ordered to ensure your satisfaction.
