About Keichitsu
"Keichitsu" in Shoto, Shibuya-ku, is a modern French restaurant by Yuki Matsumoto, former sous chef at La Grenouillère, a two-star restaurant in northern France.
The name of the restaurant, "Keichitsu," is one of the 24 solar terms(Japanese calendar) and refers to the season when insects crawl out of their winter hibernation.
The name of the restaurant reflects chef Matsumoto's wish to "provide an experience that will bring new surprises to visitors to "Keichitsu," just as new life sprouts from the ground at the time of Keichitsu, when winter turns to spring.
With this in mind, they places great importance on not being bound by stereotypes in all aspects of the cooking process, including the selection of ingredients, cooking methods, and serving methods. They offer new experiences such as a dish you have never eaten before, a combination you have never had before, a way you have never eaten before.
