Opened in Azabu-juban in 2013. Under the theme of “Teppanyaki for a new era,” we carefully prepare each dish with a focus on aroma, temperature, and harmony. Beyond grilling techniques, we select the most suitable cooking method for each ingredient, elevating the finest materials into an emotional dining experience. With the spirit of “Japanese soul with Western learning,” we will continue to explore new possibilities in teppanyaki.
【Philosophy of Wagyu Selection】
Japanese Black cattle inheriting the Tajima lineage
We strictly select only female cattle born in the Yaeyama Islands—a major producer of calves—or those raised long-term on Ishigaki Island.
Sirloin comes from cattle raised for over 40 months, and tenderloin for over 36 months. Compared to the general fattening period (around 26 months), this extended time allows the red meat to develop deeper umami and the fat to achieve a lighter flavor with a lower melting point.
This is the ideal Japanese Black Wagyu I encountered while traveling across Japan during my 30-plus years in the teppanyaki world.

Our thick-cut steaks are prepared using a meticulous method that maximizes the flavor of Wagyu: slow low-temperature cooking followed by a finish over Kishu Bincho charcoal exceeding 800°C.

If you have any specific food allergies or ingredients you cannot consume, please inform us in advance. Unfortunately, we cannot accept reservations if there are ingredients that you cannot eat within a wide range.
As we operate on a complete reservation system, ingredients are carefully prepared in advance according to your booking date. We kindly ask that you inform us of any allergies or ingredients you cannot consume at the time of reservation, as we are unable to accommodate changes or provide alternative dishes once you arrive.
Please note that we are unable to offer our course menu to guests who do not eat seafood or who follow a vegetarian diet. We respectfully ask such guests to refrain from making a reservation.

If you are unable to arrive at your reserved time, some parts of the course may not be served. Please note that an arrival delay of more than 30 minutes will be considered a no-show, and your table may be offered to other guests.

Our private room is a table-style room where completed dishes are served. Please note that it is not soundproof; therefore, speakerphone calls, voice messages, and video viewing are not permitted.
Children are welcome only if they are of an age to enjoy the full course menu. Infants and toddlers are not permitted.

■ Non-Smoking Policy
