Rooted in the dashi techniques he learned from a Kansai‑born master, the chef pursues deeply nuanced, umami‑rich flavors by layering bonito flakes, kombu, and shellfish. He also draws inspiration from his older brother, a sushi chef, and subtle expressions of his own style appear in the way he handles vinegar and seafood.
The menu consists solely of a seasonal omakase course of ten to twelve dishes, thoughtfully composed to maintain a natural sense of flow. Antique and artisan tableware from Kanazawa enhances each presentation, while the time‑worn single‑slab wooden counter lends the space a calm, grounded elegance.
The drink selection centers on local sake from Tochigi, complemented by carefully chosen sake and wines to pair with the cuisine. Rare labels in Tokyo—such as Daina and Mibu—harmonize beautifully with the delicate umami of the dashi and the inherent depth of the ingredients, leaving a gentle, lingering finish.
