About Kashiwadeno - Tsukasa Suikouan

At our restaurant, we honor traditional Japanese concepts such as “Yusoku Kojitsu” (traditional methods of ancient ceremonies and etiquette) and “Nijushi-sekki” (dividing the year into four seasons: spring, summer, autumn, and winter, and further subdividing each season into six parts), delivering a sense of the seasons through our monthly changing Hassun (appetizer platter). Following the principles of tea ceremony cuisine, we start with a light cooked rice and miso soup made from seasonal vegetables, with the Hassun served before the meal concludes. At the end, enjoy a rice dish featuring Gifu Prefecture’s “Ryu no Hitomi,” served in three ways: with homemade karasumi (dried mullet roe), a seasonal earthenware pot, and various side dishes.

Our establishment features a serene “sukiya-zukuri” Japanese interior crafted by a Kyoto master carpenter, where you can enjoy your meal in a calm atmosphere. We offer a special eight-seat counter made from a single piece of wood and unique tea room-style private rooms for a distinctive experience.

Our menu includes a variety of Japanese dishes, such as “Karasumi Gohan” (rice with homemade karasumi), white-grilled eel from Hamamatsu, and “Shima Aji no Bōzushi” (striped jack pressed sushi). We also offer a selection of national sake carefully chosen by our chef, Tomohiro Ishida, and an assortment of wines from the Burgundy region of France.
