Here, the chef showcases his passion for the finest Kobe Wagyu from Kawagishi Farm, offering an authentic kappo-style dining experience that weaves together the flavors of Japan’s four seasons. The restaurant’s signature dish, Charcoal-Grilled Thick-Cut Wagyu Tongue, is celebrated for its extraordinary tenderness. Despite its thickness, it melts effortlessly on the palate, releasing the delicate sweetness of premium fat. Enhanced by the aroma of charcoal, the profound umami of Wagyu unfolds with every bite.
