About Sushi Yuuki
[Notice] The sushi course featured on this website is prepared by our second itamae (chef). Please note that the head chef will not be personally preparing the sushi on the day of your visit.
Nestled in a quiet residential area of Hiroo, Shibuya, Sushi Yuuki offers an intimate and refined dining experience. Chef Yuuki Hayashinouchi trained for seven years at the legendary Sushi Mizutani before honing his craft for nine years as the third-generation chef of his family’s restaurant, Tokiwa Sushi in Yokohama.
The pure white shari (sushi rice), cooked carefully in a traditional hagama pot and seasoned with rice vinegar, embodies his belief that “sushi begins with the vinegared rice.” In the graceful, streamlined form of each nigiri, the lineage inherited from his master lives on. Its vivid acidity and precise temperature balance harmonize beautifully with each topping. Every grain stands firm yet tender—after a long soaking and careful cooking, the rice gently falls apart in the mouth, releasing a subtle sweetness.
The minimalist interior, centered around an eight-seat hinoki counter, exudes quiet elegance.
With its distinctive rice, sincere craftsmanship, and serene atmosphere, Sushi Yuuki captures the pure essence of artistry.
