Sushi Takehan Wakatsuki （鮨竹半 若槻）

The owner, Mr. Wakatsuki, strives to create a constantly evolving Edomae Sushi based on the concept of “surprise and excitement” while emphasizing the importance of seasonality.

Mr. Wakatsuki has been a sushi chef since he started training in sushi and Japanese cuisine at the age of 16.

He procures fish from Toyosu market, as well as ingredients shipped directly from Shimane, his hometown.

He also pays attention to detail in the décor and tableware, creating a warm and spacious interior with wood and carefully arranging everything for a serious sushi dining experience.
