Introducing 'Sushi Matsuura', where a warm light shines upon the quiet residential streets, just an approximately 8-minute walk from Shirokanetakanawa Station in Tokyo.
The young head chef, Osamu Matsuura, honed his skills on the international stage by being entrusted with opening new restaurants in Hawaii and Los Angeles while training at "Sushi Ginza Onodera." After returning to Japan, he impressed many as the chef at the private counter of "Sushi Raishu" in Ebisu, following his experience at Omotesando's "Masuda." In September 2019, he embarked on his independent journey and opened 'Sushi Matsuura,' expressing his desire to offer authentic Edo-style sushi to people of all generations.
The ingredients used in our dishes are sourced every morning from Tsukiji Market, carefully selected by our own discerning eyes. We employ intricate aging techniques to bring out the rich flavors of seafood. Our rice, used for the vinegar seasoning, is a unique blend prepared by a rice master. We cook Yamagata's Koshihikari rice in a feathered kettle, achieving a firm texture that preserves the natural taste of the rice. For the vinegar, we combine two types of aged rice vinegar from Yokoizumi Brewing, along with red vinegar, enhancing the original flavor of the rice with just a touch of salt.
One of the particularly popular dishes is the grilled conger eel nigiri. The swordfish steamed in sake is also highly recommended.
Matsuura himself personally selects Japanese sake to accompany the sushi, visiting sake breweries to choose only pure rice and pure rice ginjo sakes that enhance the deliciousness of the rice. About ten varieties are available at all times, ensuring that customers can enjoy a diverse range of different sakes on each visit.
The bright and clean interior, predominantly made of wood, exudes a soft atmosphere that reflects Matsuura's personality. The intimate counter with approximately eight seats is suitable for various occasions, whether it's a private gathering or a business meeting. It is recommended not only for families, friends, and loved ones but also as a hospitable experience for international guests.
