Chef Yuya Hirayama redefines steak with his tender and juicy charcoal-grilled Chateaubriand.

Using a dedicated charcoal oven, he takes 30-40 minutes to carefully cook the finest wagyu beef, locking in the delicate flavors without using salt or pepper.

In 2011, he opened “Ginza Hirayama,” breaking the conventions of teppanyaki with his unique method.

Sourcing the best wagyu and offering over 1,000 wines, he pairs exquisite red wines with the delicate Chateaubriand, promising an unforgettable dining experience.

• Arrival time:

  Please arrive 5 minutes before your reserved time to ensure a timely start of your meal. If you do not contact us and exceed your reservation time, it will be automatically cancelled.

  In the event of late arrival or early departure, please be aware that we may not be able to serve all parts of the course. We kindly ask you to allow ample time to arrive.

  Dress code is smart casual (Please refrain from wearing T-shirts, shorts, and sandals when you visit.)
