About Vesta
The restaurant name "Vesta" comes from the Roman mythology goddess of the hearth and whose divine body is the flame. We specialize in Sanda beef, a brand of beef that originates from pure Tajima cattle produced in Hyogo Prefecture, obtained through direct contracts with ranches and carefully selected from female Tajima cattle.
Sanda beef is famous for its marbling, tenderness, and rich, intense flavor. Our experienced artisans, known as "Kamashi," meticulously grill it over a special hearth and Kishu Binchotan charcoal.
The marbling’s excess fat is trimmed, yet the meat itself absorbs the steam, trapping a refined sweetness and aroma, while offering a crispy surface texture and savory taste that is truly captivating.
The moment it touches your palate, the exquisite flavor of the meat is unparalleled.
We also offer an extensive array of other seasonal ingredients, including natural Beluga caviar, and a selection of the finest vegetables and seafood.
