By incorporating rare ingredients such as sweet Edo miso, now being rarely offered in markets, and fresh Shiba shrimp once abundantly caught in the nearby sea, he recreates the authentic taste of Edo period cuisine. The harmonious pairing of these dishes with aromatic rice cooked in a clay pot is simply divine.
