The concept of "Ingredients × Cooking Technique × Simplicity" revolves around carefully nurtured vegetables and produce from dedicated producers, and the chef prepares them with his envisioned cooking techniques, incorporating a sense of seasonality while keeping the dishes as simple as possible. 

Drawing on the cooking techniques and ingredient handling experiences acquired in Paris, the chef works backwards from completion to grill the meat, and highlighting the seasonal vegetables procured.

Even the serving dishes are carefully chosen and unique, we ask artisans to create one-of-a-kind pieces with communication. Using exceptional ingredients and exquisite tableware, the dishes aim to express the chef's sense of aesthetics.
