“Mukyu” signifies something infinite and unending, resonating with the Zen phrase Tenjō Mukyu—“as eternal as heaven and earth.” In this name lies Chef Igarashi’s very journey as a culinary artisan, and his heartfelt aspiration for an “endless voyage” that carries the spirit of Japanese cuisine into the future and across the world.
Nurtured by the rich natural environment of Fukushima, Igarashi engraved in his heart the philosophy of training he absorbed at Kyoto’s three-starred Mizai. He went on to serve as sous-chef at Oryori Miyasaka in Minami-Aoyama, and later as executive chef at Saryo Miyasaka in Roppongi, continually refining his craft. Moving fluidly between tradition and innovation, he has long pursued the very essence of cuisine.
At Oryori Mukyu, each dish reflects the fleeting beauty of Japan’s four seasons, highlighting the fragrance of wood fire and harmony with the vessel in which it is served. While honoring tradition, the cuisine captures flavors that can only be born in a single moment in time—an embodiment of ichigo ichie, a once-in-a-lifetime encounter.
By cherishing the quietude and subtle beauty of Japanese gastronomy, Oryori Mukyu seeks to transcend borders and convey the true spirit of Japanese culture. It stands as Chef Igarashi’s new point of departure—a pursuit of the infinite possibilities of cuisine that lead into the future.
