About Sushi Nagashima

From Kagoshima fisherman to sushi chef. Edo-mae sushi in Shirokane by the owner with a unique background.

The owner, Tomoharu Arai, worked as a fisherman in Nagashima, Kagoshima for three years from the age of 15 before moving to Tokyo. After graduating from culinary school, he has extensive experience at restaurants in Tokyo and abroad.

The course alternates between nibbles and nigiri-sushi, featuring tuna from “Yamayuki," the wholesaler that supplies famous restaurants, sea urchin from Kyushu, Hokkaido, and various other seasonal sources, and Japanese spiny lobsters from Mie and Chiba.

The ex-fisherman’s keen eye for detail is evident in the pairing of these exquisite ingredients with our special vinegar rice, made from a blend of two types of rice and two types of red vinegar. The sweetness of each grain of rice and the rich flavor of red vinegar harmonize perfectly with the carefully crafted Edomae sushi.

The restaurant has a Japanese cypress counter with seven comfortable seats. Enjoy blissful sushi as you wish.

    Sushi is served in a highly refined atmosphere. Each piece of sushi sparkled beautifully. The meticulous way the head chef-crafted each one was truly impressive. It's not an exaggeration to say it was the best sushi I've ever had.
