Wagokoro Izumi （和ごころ泉）

Nestled in the bustling district of Kyoto, “Wagokoro Izumi” is a Japanese restaurant that offers a serene Kyoto machiya (traditional town-house) atmosphere, conveniently located within walking distance from Shijo Subway Station.

Taking over the location of the renowned restaurant “Sakurada,” Chef Masaki Izumi combines tradition with innovation in his culinary creations. Having trained in Nagoya and Tokyo, Chef Izumi honed his skills and embraced the sincere spirit of Kyoto cuisine at “Sakurada.” In 2006, he established “Wagokoro Izumi” on the former site of “Sakurada,” which closed in 2016.

The cuisine at “Wagokoro Izumi” is characterized by delicate flavors that showcase seasonal ingredients without unnecessary twists. Chef Izumi personally visits producers to select ingredients that meet his standards, using only Rishiri kombu (a high-grade kelp) for his dishes and demonstrating meticulous care, even visiting the manufacturing process of rare fermented dried bonito.

Signature dishes include the “Tamago (egg) Castella” served on the appetizer hassun tray, known for its fluffy texture that leaves a lasting impression, and the “Grilled Sweetfish” prepared using Chef Izumi’s exclusive grilling technique, offering a delightful crispy exterior and tender flesh.

The restaurant also boasts a rich selection of Japanese sake, including original sake developed in collaboration with Kyoto breweries.
