
About Akasaka Sushi Shino
"Sushi Shino" opened in 2022 as a hidden gem for adults in a quiet back alley of Akasaka, where you can enjoy sushi with all your senses.
The proprietor is Koichi Shinohara, who has experience at famous restaurants in Ginza and Singapore. He personally goes to the Toyosu Market every morning and carefully selects seasonal ingredients.
The rice used for the sushi is made from large grains of old rice, and the vinegar is made from red vinegar aged for a long period of time. The sushi has a sharp taste, but also a mellow finish with the natural sweetness of the ingredients.
This small restaurant for a small number of people allows everyone to enjoy a special and enriching moment.

The fish was beautifully presented and extremely fresh, one of the best meals we had in Japan (and we went to several Michelin star restaurants throughout our two weeks). I highly recommend this places - the chef was great fun to talk to and good English, nice atmosphere and perfect eight person sushi bar.John D
