At "Restaurant L'AFFINAGE," we present dishes rooted in French culinary techniques, crafted with seasonal ingredients sourced from across Japan.
The name "L'AFFINAGE," which means "maturation" or "refinement," embodies our aspiration for both our cuisine and service to continually mature over the next 10 to 20 years. It also reflects our desire for our restaurant and chef to grow in harmony with the meaningful connections we foster with our valued guests, both past and future.
Chef Yasuyuki Takara, following his early experience at the Hotel Metropolitan, spent two years honing his skills in the Savoie region of France and other areas beginning in 1989. After returning to Japan, he served as sous chef at "Le Maestro Paul Bocuse Tokyo" in Akasaka and head chef at "Nambutei" in Hibiya. In 2002, he was appointed executive chef for the opening of "Brasserie Lecrin." He later became executive chef at "Ginza L'ecrin" before founding "Restaurant L'AFFINAGE" in Ginza 5-chome in October 2018.
Chef Takara's dishes, grounded in French cuisine, are thoughtfully adapted to suit contemporary tastes, with each plate celebrating the authentic flavors of seasonal ingredients. A signature creation, "pavé de foie gras et figue," exemplifies his dedication to showcasing the natural essence of each ingredient. Our wine selection is exceptional, focusing primarily on French wines while also featuring a diverse range of domestic and international labels. With approximately 400 bottles to choose from, we also offer a refined tea menu crafted from carefully selected tea leaves. Guests can enjoy our exclusive "Tea Pairing," featuring eight exquisite teas perfectly matched with each dish. Additionally, a "Wine Pairing" course is available to elevate your dining experience.
The restaurant's interior exudes sophistication, featuring a stylish yet serene ambiance with white and gray tones that create an elegant atmosphere for adults. Guests can choose from counter seating, perfect for enjoying a view of the chefs at work, spacious table seating, or private rooms designed for an intimate dining experience.
