About Ginza Kousui
Located on the 8th floor of a building just a 3-minute walk from Ginza Station, and in close proximity to the bustling Kabuki-za theater and Higashi-Ginza Station.
The owner, Mr. Masashi Maeda, spent 12 years honing his skills in the Kansai region, including at the renowned Kyoto ryokan (traditional Japanese inn) called Sumiyasou, before establishing his independence in his hometown of Shizuoka. Amidst the trend of locally famous restaurants expanding to Tokyo, he was eager to test the recognition and proficiency of his own cooking. Inspired by the Zen phrase "Matsu Kotobuki Sennen no Midori" (The Evergreen Pine, Thousand Years of Green), he relocated to Ginza and named his restaurant "Kousui"
The dishes at Ginza Kousui combine the vibrant flavors of Shizuoka's bountiful seafood and mountain produce with seasonal ingredients sourced from across the country, captivating food enthusiasts with their beauty and taste. Actively incorporating Shizuoka's local ingredients, they offer refined and seasonally inspired cuisine. Particularly noteworthy is their soup served in a bowl, where the broth harmoniously combines the rich flavors of thick Rausu kelp and the refreshing taste of meji bushi (a type of dried fish flakes) compared to bonito flakes, resulting in a delightful blend of umami and aroma that beautifully complements the seasonal ingredients.
They also offer a selection of carefully curated drinks to accompany the cuisine, with a focus on Japanese sake sourced from Shizuoka's breweries. These prideful Japanese sakes further enhance the main attraction, which is the cuisine.
The interior of the restaurant features six seats at the counter, where guests can enjoy conversations with the chef, as well as a comfortable private room for four, totaling ten seats in a tranquil Japanese atmosphere that makes one forget the hustle and bustle of the Ginza district.

Each course is as beautiful as it is delicious with intricate precision and attention to detail. The staff is lovely and make you feel at home. Despite a bit of a language barrier, they remain helpful and attentive. Finally the chef prepares each plate in front of the guests and ensures each dish is served to perfection. We came late 1 hour (totally our fault), but the host totally understood and tried to accommodate us anyway. The food was perfectly balanced with very interesting ingredients. The chef was friendly as well when he noticed one of our guests have shrimp allergy.Huy Tran
