About Kasumicho Yamagami

Located in the neighborhood of Nishi-Azabu, a city known for its numerous acclaimed restaurants that tantalize food enthusiasts, stands "Kasumicho Yamagami."

The transition of generations is a natural occurrence. After serving as the chef at the renowned "Kasumicho Suetomi," where many connoisseurs of Japanese cuisine frequented, Yasuo Suetomi decided to establish his own restaurant in 2005 And now, another transition of generations is taking place.

With deep respect for the retiring Suetomi, "Kasumicho Yamagami" emerged as an independent establishment, led by the new proprietor, Tomoaki Yamagami. Having graduated from a culinary school and honed his skills at various establishments, Yamagami spent over a decade as Suetomi's right-hand man, safeguarding the kitchen. The fact that the location, interior, and staff remain unchanged is a testament to Yamagami's esteemed reputation.

The dishes served at the restaurant also carry a sense of history. One notable specialty dating back to the Suetomi era is the "Grilled Soft-Shelled Turtle." The turtle, meticulously grilled over charcoal, is coated with a special sauce, resulting in a remarkable delicacy with a robust aroma, satisfying texture, and a rich, lingering flavor that lingers on the palate. Another signature dish that demands meticulous attention is the soup served in a delicate bowl, a technique inherited from Suetomi. Utilizing Rishiri kombu (kelp) and genuine dried bonito flakes, the soup is brewed using cold water to extract the sweet flavors of the kombu, while carefully controlling the balance of the overall taste.

Additionally, the restaurant continues to explore its unique creations, such as the simmered Kamo eggplant. After deep-frying the eggplant and removing excess oil, it is further simmered in dashi (broth). The dish is then enhanced with a special sesame paste, adding a creamy texture reminiscent of sesame tofu, while preserving the authentic flavor of Kamo eggplant.

    This is the best restaurant in Tokyo for me. Chef has a wonderful sensibility and palate for his food. And extreme attentiveness to his guests needs.
