After serving as head chef at the renowned Kyoto restaurant Wakuden, Chef Hidetsugu Okamoto opened Ginza Okamoto in 2012. With decades of dedication, refined skill, and a discerning aesthetic sense, he continues to captivate gourmets from near and far.
Seated at the counter, guests witness a live performance of precise, honed craftsmanship. Each ingredient is handled with meticulous care, its character drawn out to the fullest and transformed into a beautifully composed dish. The chef’s intensity and focus—his deep engagement with each plate—create a sense of immediacy unique to Okamoto.
While rooted in the traditions of classical Japanese cuisine, the menu also reflects the chef’s distinctive creativity. Within the foundation of time‑honored flavors lies a harmony of innovation and surprise.
The signature Karasumi Soba features generously shaved mullet roe paired with the nutty aroma and texture of buckwheat—a dish that leaves a lasting impression. Seasonal creations, crafted with imagination and finesse, offer new discoveries with every visit.
Vegetables—central to Japanese cuisine—are sourced primarily from richly flavored Kyoto produce. Rice is carefully selected from regions such as Niigata and Kyoto to best complement each day’s dishes. The sake selection, centered on crisp, dry varieties from Niigata, is curated to pair seamlessly with the cuisine.
The interior blends Japanese and Western aesthetics in a sophisticated, harmonious space. In addition to nine prime counter seats, a private room with an L‑shaped counter for five guests is also available—ideal for anniversaries, business occasions, or cherished family gatherings.
