The owner of Jizozushi has 35 years of experience dedicated devotedly to the art of sushi making. Even on days when the restaurant is not open, he visits the fish market to procure the freshest ingredients and meticulously prepares them at the restaurant.
Using a variety of traditional Edomae sushi ingredients, he adheres to the classic techniques rather than chasing trends.
He conveys the trend of the times to the present, such as the vinegared rice made with red vinegar is cooked in a feathered kettle, Japanese tiger prawn sandwiched in seaweed reflect the Edo-style nigiri, while simmered scallops represent the Showa era style.
His knife handling is as exquisite as his artistry with fish. Beyond skillful fish handling, enjoy the harmonious balance between the expertly aged red vinegar shari and the toppings.

We will open the entrance precisely at your reserved time, so please arrive on time. The experience will start simultaneously for all guests. If you exceed your reserved time without notifying us, your reservation will be automatically considered canceled.
