Guillaume Bracaval, Chef de Cuisine of est—which has been honored with one star in the "Michelin Guide Tokyo 2026" for five consecutive years—and his team not only provide a high-quality, memorable fine dining experience for guests, but also manage and compose menus with a constant awareness of the global environment.
Located on the top floor of the hotel, please enjoy innovative and contemporary French cuisine inspired by a deep knowledge of the Japanese terroir (origin).
Born and raised in a small village in northern France, Bracaval was deeply influenced by the vegetable gardens and farms at home. His passion for ingredients and cooking since childhood led him to Paris. Bracaval personally visits various parts of Japan and makes no compromises in sourcing ingredients for his kitchen, such as fresh fish caught by fishermen in Kyushu and over 50 varieties of citrus fruits grown on farms in Wakayama. The menu at est is crafted by beautifully fusing French techniques with Japanese craftsmanship, using an abundance of bounty from both the sea and the mountains.
