Located near the iconic hotel The Ritz-Carlton Tokyo, is "Edomae Sushi Hanabusa," a sushi restaurant.
Hideki Nakajima, who honed his skills for over 20 years at a long-established Edomae sushi restaurant with a history of over 200 years, opened his own restaurant in March 2015. He has acquired the wisdom and techniques passed down through generations, diligently upholding the traditions of Edomae sushi.
Conscious of the original Edomae style, which focuses on seafood from Tokyo Bay, the restaurant actively and carefully sources ingredients from the Boso region, in Chiba.
"Tekka-maki" is one of the masterpieces. It is served at the end of the course. Made without a bamboo mat, the roll envelops a generous portion of marinated tuna belly with a fluffy and abundant shari (sushi rice), providing an incredibly smooth melting sensation with each bite.
The chef places great importance on the balance of taste spread across your tongue.
The use of red vinegar and salt brings out the natural sweetness of our sushi rice.
He applies his own homemade soy sauce or tare (glaze) to each piece, so there is no need to dip in soy sauce.
He works hard to prepare each sushi so that it highlights the flavors of every ingredient.
The interior of the restaurant consists of an eight-seat counter, all made of 〃sukiya based on the style of a Japanese tea ceremony building, creating an atmosphere of refinement. It is ideal for private occasions such as dates or entertaining guests.

The waitress was fluent in English and explained the fish well. I loved that all the fish (except the uni) came from Tokyo Bay and that many items were seasonal. Can't wait to go back!Gio

Posted on : 07/26/2024This has been the best experience I have ever had! My wife and I celebrated our anniversary here and it was absolutely amazing!
The chef has an eye for details and noticed if we were left handed or right handed while picking up the food.
The restaurant has a very warm and welcoming interior with a mixture of ancient wood. The main cutting board itself is made from 300 year old wood and the supporting board is over 200 years old.
The staff were very welcoming and explained the intricacies in how each piece is prepared and explains in depth how the chef incorporates different techniques into certain items.
I would highly recommend their signature Anago (sea eel) as the recipe has been passed down for 6 generations!

Posted on : 04/13/2024Dinner was great. It was enjoyable watching the chef put together each dish and explain what they were, followed of course by getting to taste it. The chef doesn't speak english very well, but has two nice Japanese women working as waiters, one of whom had very good english and was able to translate everything. We had ~10-11 courses I believe along with some extras we purchased at the end. My personal favourite was the Japanese sea eel (Anago), followed by the tuna and sea urchin (uni). But to be frank, everything was great. We even had a bottle of Sake that is only sold to Michelin starred restaurants. As someone who tried some cheaper sake previously and didn't like the taste, this one was outstanding with no bad aftertaste or burn. Highly recommend, would go again.Mark M

We were lucky to be the only guests for the first half of our meal, so we got a lot of time with the chef and able to talk about the food ingredients. All of the sushi was great, especially the otoro, squid, and tuna rolls. At the end of the meal, there's also the option to have additional pieces if you choose, which I would recommend getting at least one more of your favorite! Definitely a memorable experience.JH
