"Sens & Saveurs" is a French term that signifies the pursuit of the five senses.
Through the landscape, interior design, music, conversation, and cuisine, the Pourcel brothers aim to provide an experience where you can enjoy your meal through all five senses. This philosophy is embodied in their Tokyo restaurant.
"Pourcel Cuisine" is based on the cuisine of the Languedoc region in France and Mediterranean flavors.
Using the technique of "Sucré-Salé," which pairs the natural sweetness and acidity of fruits with contrasting seasonings like salt, they amplify the umami flavor of the ingredients. Another characteristic technique, "Terre et Mer" (Land and Sea), creates a synergistic effect by combining ingredients from both land and sea.
The exquisite balance of ingredients and seasonings creates surprising flavors and lightness, embodying the essence of "Pourcel Cuisine."
