Quatre-vingt-douze

Saucer is a modern French restaurant guided by the concept of concentration, refinement, and harmony. Its name comes from the French verb meaning to sauce or to wipe up sauce with bread. Chef Kazuma Gunji, who previously served as a saucier at renowned establishments, presents cuisine centered on sauces that draw out and concentrate the natural flavors of carefully selected ingredients.
A signature element is the triple consommé, meticulously crafted over three days to achieve exceptional clarity and depth. The course begins with this consommé served as a soup. Another highlight is the restaurant’s sauce‑driven dishes, designed to be enjoyed with freshly baked bread and seasonal ingredients.
Chef Gunji trained in France beginning in 2014, honing his craft at the one‑Michelin‑starred Maison Clovis in Lyon and other restaurants. After returning to Japan, he further refined his skills at the two‑Michelin‑starred ESqUISSE, forming the foundation of his current culinary style.
The interior features a warm yet minimalist atmosphere, with exposed concrete ceilings and wooden tables. Contemporary artwork adorns the calm dining room, which offers four counter seats and four tables seating eight in total. Guests can enjoy the dynamic energy of the open kitchen while relaxing in an elegant setting.
The restaurant offers a selection of French wines, along with house‑made non‑alcoholic beverages and carefully curated Chinese teas. It is an ideal destination for anniversaries, special occasions, or a refined dining experience shared with someone special.
